Batch-to-batch inconsistencies in gel-based products are often a major headache for manufacturers. Why do the finished products vary when I’m clearly using the same formula?
In fact, most batch-to-batch variations are not caused by formulation errors. This is because hydrocolloids (gelatin, pectin, carrageenan) are natural ingredients, and their composition can vary from batch to batch.
Through our collaboration with numerous manufacturers, we have summarized practical steps for large-scale plants to prevent variations in gel strength:
1. Control the Temperature Environment
The structure of the gelatin network is extremely sensitive to temperature changes. Even a temperature fluctuation of 1.5 degrees Celsius can cause a 6%–10% change in measured gel strength. To mitigate the impact of temperature fluctuations, manufacturers establish and implement strict heat treatment protocols. Typically, the gelatin Bloom test is conducted at 10°C for 16–18 hours.
2. Conduct Timely Incoming Inspection of Gelatin or Pectin Raw Materials
If gummy candies are tested only after production and fail to meet standards, the entire batch is scrapped. To avoid such cost losses, manufacturers conduct on-site acceptance inspections of incoming raw materials using standard Bloom tests and other appropriate testing methods.
3. Select Appropriate Probes
For products such as candies and jellies, texture analysis is used to conduct dual-compression cycles and measure hardness, chewiness, and elasticity.
For jellies and spreadable products, a penetration ball or cone is used to measure gel rupture strength and spreadability.
Hard capsule products require targeted tensile/breakage testing to prevent cracking under stress.
4. Use a Professional Gel Strength Tester or Texture Analyzer
Shift from subjective to objective evaluation by eliminating testing methods that previously relied on manual observation and obtaining objective, quantifiable results through a texture analyzer.
